Green Tea Basil Avocado Pops

Makes 8

Sometimes a hot summer day calls for an icy treat like these green tea pops! Skipping the sugary, cream filled ice-cream and opting for healthy and invigorating green tea, lime and basil, makes these ice pops a no-brainer for my family on scorching hot days. But they make a nice snack any time of year, so stock your freezer!

1 C strongly brewed, cooled, green tea (in a mug, pour hot water over a green tea bag. let it steep for 10 minutes. remove bag and place tea in the fridge until cooled.)

1 large ripe avocado

1 C coconut milk

1/4 C white grape juice (or apple juice)

3 TBSP lime juice (2 medium limes)

2 tsp lime zest

2 large basil leaves, coarsely chopped

1/8 tsp sea salt

5 ice cubes

  1. Add all ingredients to a food processor or blender and puree until smooth.
  2. Pour mixture into ice cream pop molds and freeze until solid. Enjoy!!

Option:

  1. Omit basil.
  2. Add 1 C pineapple chunks, 1/2 C finely shredded coconut and 1 tsp pure vanilla extract.
