No’oat Granola


Oats are an -iffy subject in the gluten free world.  Many folks swear by certified GF oats, but the other half of the equation cannot tolerate them and question their overall safety/digestibility.  The Maniac has always had problems with oats, even the most carefully cultivated.  That coupled with the fact that it’s the only “GF” grain out there that doctors and gluten intolerance organizations post consumable limits on, and you can see what side of the fence we are on.  Most gluten free granolas rely heavily on oats and nuts for their blends, which presents a problem for our oat-free and nut-sensitive youngest.  She presented us with a challenge the other day…make me some granola please, or I will cry and make you feel bad was the gist of the conversation.  (Not really…but that’s what my mom ears heard)  So while I was working, The Maniac swooped into action and saved the day!  Here’s what he created:

  1. 1/2 C Organic Raw Pumpkin Seeds
  2. 3/4 C Organic Raw Sunflower Seed Kernels
  3. 1/4 C Organic Raisins
  4. 1/4 C Organic Dried Cherries
  5. 1/4 C Unsweetened Organic Coconut Flakes
  6. 1 tsp Pure Vanilla Extract
  7. 1/2 tsp Pure Almond Extract
  8. 1/4 C Pure Grade B Maple Syrup
  1. 1) Mix all ingredients in a medium mixing bowl, coating everything well with
 the maple syrup.
  2. 2) Spread the mixture evenly on a parchment lined baking sheet.
  3. 3) Bake in a 350° oven for 12 -15 minutes, or until coconut is golden. Stir 
once half way through.
  4. 4) Remove from oven and let cool on a wire rack.  (If you feel a little crazy,
 feel free to toss in a few mini chocolate chips - such as Enjoy Life).
  5. 5) When completely cooled, mixture will be crunchy and delicious! Use as 
a snack or put some in a bowl with a little coconut milk for breakfast 
cereal in the morning.  Either way, I think you'll like it!
  1. Instead of dried cherries try diced dried apples and add in some cinnamon for a fall flavor!
